做(zuò )法:春(chūn )笋切(qiē )成片后加少许(xǔ )盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入(rù )生(shēng )抽、老(lǎo )抽、蚝(háo )油翻炒均匀(yún ),加入少量(liàng )清水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快(kuài )熬干(gàn )的时候加入(rù )盐,翻炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。
