做(zuò )法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入(rù )2勺油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左(zuǒ )右。再(zài )加(jiā )入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖(gài )大火煮开后(hòu )转中(zhōng )火。煮到(dào )水(shuǐ )快(kuài )熬干的时候加入盐(yán ),翻炒均匀(yún )稍收(shōu )汁(zhī )时盖上锅盖焖。
